Gluten Free?

Where are you on the gluten free diet continuum? Are you on board? Or are you still unsure what gluten even is? Keep reading and there might be a giveaway opportunity here!

A while back, I didn't know what gluten was either (hint: it's a protein found in wheat that many people can't digest). And to be honest, I thought the gluten free diet was a fad and that people (my sis included) were being a tad ridiculous. I've had plenty of experience with dietary issues, so you think I would have been more open minded. But in this case, I wasn't. Even when my hubby was diagnosed with hyperthyroidism and needed a gluten free, dairy free diet (yes, diet can help manage autoimmune diseases). I resisted. It wasn't until my oldest was diagnosed with gluten sensitivity that I finally caved and did my research. Finally. Usually I love to research. But in this case, I really didn't want to give up bread. Or cheese. Change is hard, y'all.

But after many years of trial and error, we are now very comfortable with our gluten free, dairy free diet. I've found a bread recipe I love (I still can't stand store bought gf bread). I've altered family favs to be gluten free. And I've finally perfected a gf angel food cake. But some meals are still a challenge. Quick, hot lunches or dinners when mama's tired, for example. Most mamas would grab pizza, chicken nuggets, or mac and cheese for these times. But with our diet, those are either expensive or simply not an option. Until now. 

My sis (yep, the one I thought was nuts) found this gf, df mac and cheese made by Funny Farm. And it's actually good! And not loaded with chemicals or antibiotics! Win, win! 

There are so many more options now for gluten free and dairy free than there were even 5 years ago. Of course, processed foods should be eaten on rare occasions, but it's nice to have the options when you need them!
